Mocha Overnight Oats

 

I have two great loves in life, coffee and oats. On my days off I love checking out new coffee shops or trying different blends. I have oats in some shape or form every morning, Bircher museli, overnight oats, porridge and granola. The options are endless. So to combine my two loves and add chocolate…….heaven!

This recipe came to me as I was researching the effect of cacao on serotonin and cravings. Research shows that consuming cacao early in the morning may help to curb cravings in the afternoon, handy if you are trying to lose weight or stay away from the 3pm slump vending machine. The best thing about this breakfast is that it is customisable. Vegan? Just use non dairy yogurt and maple syrup! Forgot to buy berries? Top with banana instead. Easy!

Ingredients

1-2 tsps of instant coffee

1 tsp cacao

1 tsp honey

Dash of vanilla essence

1/2 cup of oats

Yogurt toppings (you can choose whichever you prefer or have to hand)

Fresh berries (again your favourites or whatever is in season)

Cacao nibs

Dessicated coconut

Method

Using jar for the overnight oats, make instant coffee with 1 cup of water and add cacao, vanilla and honey. Allow this to cool slightly.

Add porridge oats and place in the fridge overnight.

In the morning top with yogurt of your choice and toppings. Dark choclate and raspberries are my favourite. What other flavour combinations would you try? Let me know in the comments!

Winner winner chicken for dinner

In the last of our kid chef mini-series, I asked the boys what was their favourite food. By unanimous decision it was….chicken nuggets. Every parent know these little bites are winners with even the fussiest of eaters.  Stashed in the freezer they make a super quick meal too. The summer holidays are in full swing with most primary schools finishing last week, it’s time to look at some activities to keep the kids distracted over the holidays.
