Sugar free raisin cookies

This recipe is in The Extra Virgin Kitchen cookbook, decided to try it out as it had basic ingredients and didn’t need a food processor! These cookies dont keep well so make sure and invite some friends over or eat the lot (I swear I only had 9 out of 12!)

These cookies have a good sweet flavour to them but don’t really get crunchy like traditional cookies 😦 so the search continues……..

The last two lonely cookies


1 medium apple

1 cup of oats

2 mashed bananas

½ cup of raisins

2 teaspoons of baking powder

1 teaspoon of cinnamon


Preheat oven to 180°C/350°F, place a teaspoon of coconut oil on the baking tray and plave in the oven.

Grate the apple into a mixing bowl. Add in the remaining ingredients and mix really well. Remove the baking tray from the oven and it should be greased with the melted coconut oil, spread so it evenly coats the tray.

Using a tablespoon place the dough on the tray and flatten with the back of the spoon. Place on the baking tray and back in the oven for 12 minutes, leave longer for slightly crunchier cookies! Enjoy warm or cooled.

  1. Unfortunately crunchy cookies have the texture they do because of sugar’s ability to caramelize and spread when baked. Not sure how you’ll be able to replicate that. If I come across a crunchy cookie sugar free recipe I’ll let you know. Your recipe sounds really tasty though!!
